1st week of FFF!

Hello......hope you have all had a great week!

Just thought I'd do a round up of how the my Fun, Fit, Feb is going! I will try my best to update you all on Sunday, let you know what I've been up to!
Firstly I'd like to say I've ENJOYED this week, I feel like I've spent MOST of my time in the kitchen, but I've really enjoyed it......not something I'd EVER thought I'd say!
This week I've had no processed food, well apart from a few of my friends crisps last night....well we were sat in a pub, and I was drinking herbal tea whilst she had alcohol!
I've mainly been concentrating on my Delicious Ella book and Keep It Vegan, both books I will review at a later date. I've managed to make several new recipies.

Lentil and Buttersquash Dhal from Ella Delicious....this was lovely but I'm not sure the spices were sufficiently cooked through, next time I will add them into the oil at the start, and oven roast the butternut squash before adding it to the dish. I've made lentil soup, vegetable soup and the most delicious Crusty No-Knead Carrot and Courgette bread from Keep It Vegan, which is really a meal in itself!
Raw Brownies......these are very sticky, and very delicious! Sweet Potato Brownies, I'm really not sure on these, they are not chocolate flavoured enough for me, at all....so I'm going to make a chocolate/hazelnut spread and pop that on the top. I've been using raw cocoa, which hasn't been cooked so retains more of the goodness.
For breakfast I've been eating my homemade Pecan and Cinnamon Granola, it's been soup or salad for lunch and something equally delicious for dinner.

And so how do I feel? Exhausted! It's worn me out! Not quite what I envisaged.
But you know something.....I feel blooming brilliant, I feel happy, contented...I feel like I'm doing my absolute best to keep my body as healthy as I can. Empowered.

I've got so much to learn, I'm not the best of cooks....I'm definately along the lines of Wendy Craig's character, Ria in Butterflies! Yes I'm tired, and perhaps I need to pace myself more this week, but I really believe we are what we eat. I really believe making more changes to my diet will help keep my MS under control.

So there we have it, first week finished.....and it feels good, very good! This week I'm going to try and incorporate a little gentle exercise too, my day out yesterday made me realise just how weak my body was becoming.
Oh yes, and I need to work out how to cook, and get some creative time in there too!

Amanda :) xxx

Read Gone Girl book this week......think I might be only person who didn't really like it, it was good, but not brilliant :) xxx

  1. So glad you are feeling good! I am very slow at following new recipes, it sounds like you had lots of new ones to try. I find I have to re read about 20 times or so before it makes sense.

  2. So glad that you are feeling so good - if a little worn out! It sounds as though you have discovered some really great dishes. I have read several reviews of Gone Girl and no one has been that keen so far! So it appears that you are not alone! xx

  7. A standing ovation to you for all your efforts toward a healthy lifestyle.

I too was diagnosed with MS several years back. Fortunately for me, my case so far has been fairly moderate. I find I have to be fairly cautious about my energy levels. Once I wear myself out, it seems to take forever to get the energy back. I'll be waiting for your FFF reviews. By the way, I am with you on Girl Gone. I took the book on vacation and gave it away after 4 chapters.

    1. Yes those energy levels are a pain aren't they, it's very difficult to explain to anyone just how it feels, and how quickly it can take over! Keep well Cheryl :) xxx

  8. Mmm, love the sound of the carrot and courgette bread. I think it's so positive to take control of any area of our lives, and I am sure you will reap the benefits of such a healthy diet. I read 'Gone Girl' last summer and to be brutally honest I found it unbearable! X

  11. I'd seen the Ella book and had a quick flick through so look forward to your review...
Well done on making all that healthy food. It takes a lot of work doesn't it? But you have inspired me. Maybe March will be my month - I'm desperate to get some exercise but am still recovering from this horrible chest infection.
The bread looks wonderful by the way.
I hope you continue to feel great.

  12. Well done on your first week and you made me laugh about Ria from Butterflys! I loved that programme so much. I can heartily recommend the Hemsley and Hemsley book to go with your deliciously Ella book and also Laura's wholeheartedly healthy blog which has loads and loads plant based super lovely recipes.

  18. you've done really well! there is a lot of trail and error at the beginning I think. I have just eaten the broccoli and avocado salad from Deliciously Ella. I couldn't get the sauce to mix and I think i put in too much Tamari and Lime. I'll have to watch my measurements! I really fancy making some healthy bread, yours looks fab. X

  19. Good for you, I'm sure the new diet will make a different for you. I liked Gone Girl but I didn't love it the way a lot of people did. I thought it was a bit overrated, actually.

  20. Everything you've made here looks delicious. Labour intensive, yes, as all cooked-from-scratch food is, but still delicious. Just think of all that goodness running through your system right now. It can only do you good. xx

  24. Good for you! Hang in there. As for Gone Girl, not you aren't the only person who doesn't like it. It took me forever to get through it and I simply did not enjoy it. But I rarely will not finish a book. However, her other two books, I found very good.
    Hugs,
    Sharon
